Fish Fry and Barn Dance At Sonny Janczak's in Buckhorn TexasFish fries are pretty common on Friday’s during lent and on Friday evening, April 9, 2011, a group of Polish music lovers met in a large barn just a few miles east of downtown Buckhorn, Texas for some good food, music, fun and fellowship. As it turned out, the owner of the barn, Sonny Janczak, is not only an accomplished Polish fiddler, he’s also capable of cooking up some of the best fried catfish you’ve ever eaten. The fish was served with french fries and a host of other delicious meatless dishes brought by the guests.

Restoration Underway At St. Mary Catholic Church In Brenham

Restoration At St. Mary, Immaculate Conception Catholic Church in Brenham, Texas.St. Mary, Immaculate Conception Catholic parish in Brenham, Texas was founded in 1870 and was the spiritual home of many of the early Polish immigrants in Washington County. The large brick church that is in use today was built in 1936. When I visited the church on March 10, 2011, the entire church was covered by sections of scaffolding supporting a plywood floor just below the arched ceiling of the sanctuary and the assembly area.

2011 Polish Agriculture Representatives Visit Grimes County TexasOn Friday, March 4, 2011, members of the Agriculture Business Association of Poland and The National Association of Cereal Producers of Poland along with their host Dr. Jim Mazurkiewicz, Leadership Program Director for Texas AgriLife Extension stopped for a short visit at the historic St. Stanislaus Catholic Church in Anderson, Texas. St. Stanislaus church was built in the early 1900’s by Polish immigrants who settled in Grimes county.

The members of the Agriculture Business Association of Poland and The National Association of Cereal Producers of Poland were hosted by Dr. Jim Mazurkiewicz, Leadership Program Director for Texas AgriLife Extension. On Thursday evening, March 3, 2011, Dr. Jim and his wife Kathy opened their beautiful home in Bryan, Texas to host a reception and catered dinner for the Polish delegates.

Baba Kartoflana (pronounced Bah-Bah Kart-oh-FLAH-nah) is a great comfort food that is simple to make and perfect for any time of the day, especially during these long cold winter days.  It is a dish I grew up with, although we just called it Kartoflak (pronounced Kart-oh-FLahk).  But I guess the American name for it would be Polish Potatoe Casserole, or Polish Potatoe Pie.
